Cool And Tasty Summer Coleslaw

Ingredients:

1/3 C. plain nonfat yogurt
1 Tablespoon apple cider vinegar
2 Tablespoons honey
2 C. coarsely chopped cabbage
½ C. shredded carrots
¼ C. chopped green pepper
¼ C. finely chopped celery

Directions:

Combine yogurt, vinegar, and honey in a large bowl. Stir until smooth. Add vegetables and mix well.  Cover and chill for at least 30 minutes. Drain liquid before serving. (Servings 4)

Garlic Sweet Potato Mash

Sweet potatoes are packed with vitamins and is a great “skin” food.  Garlic has strong antioxidant vitamins and gives this mash a rich flavor. 

4 large sweet potatoes, scrubbed, peeled and cubed
3 tablespoons unsalted real butter
3 garlic cloves, peeled and crushed
Salt and black pepper to taste

Place the sweet potatoes in a large pan of salted boiling water.  Cook for approximately 15 minutes or until tender.  Drain and set aside.  Melt the butter in a saucepan and sauté the garlic over low heat for about 1 to 2 minutes.  Stir often and don’t let the garlic burn as it will taste very bitter.

Now pour the garlic butter over the sweet potatoes, season with salt and pepper and mash until creamy.  Serve immediately.

Note:  if the mash is too thick, add a little vegetable broth or warm milk to make a creamier texture.

Hot Fried Rice

Ingredients:

2 Tablespoons oil
1 C. rice, uncooked
1 clove minced garlic
½ C sliced green onions
2/3 C. chopped, canned hot chilies
½ C. diced fresh tomatoes
2 C. low-salt broth (vegetable or beef)

Directions:

Heat oil in a heavy skillet and sauté rice. Stir until rice is golden brown. Add remaining ingredients. Cover and simmer thirty minutes. (Serves 6)

Sweet Carrots

Easy Vegetarian Recipes

Ingredients:

4 C. baby carrots
2 Tablespoons brown sugar, packed
2 Tablespoons honey
2 Tablespoons fat-free margarine

Directions:

Combine sugar, margarine, and honey in a saucepan. Heat and stir constantly until melted. Place in an ovenproof casserole dish, with a lid. Pour honey mixture over carrots and stir well. Bake at 400 degrees F for one hour. (Serves 6)
